Jollof Spaghetti with Chicken

A tasty twist on a classic dish, this Jollof Spaghetti is cooked with rich tomato sauce and served with juicy fried chicken.

  1. Season the chicken with salt, thyme, curry powder, and one seasoning cube. Let it marinate for at least 30 minutes.
  2. In a large pot, heat 2 tablespoons of oil over medium heat. Fry the chicken until golden brown and cooked through. Remove and set aside.
  3. In the same pot, add the remaining oil. Sauté the onions, garlic, and bell pepper until softened.
  4. Add the tomato paste, blended tomatoes, and scotch bonnet pepper. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
  5. Season the sauce with salt, the remaining seasoning cube, and more thyme and curry powder if desired.
  6. Add water and bring the sauce to a boil. Break the spaghetti in half and add it to the pot.
  7. Stir and cook the spaghetti in the sauce until it's al dente, adding more water if needed.
  8. Return the fried chicken to the pot, letting it simmer for a few minutes to absorb the flavors.
  9. Garnish with parsley and serve hot.
