Jollof Spaghetti with Chicken
A tasty twist on a classic dish, this Jollof Spaghetti is cooked with rich tomato sauce and served with juicy fried chicken.
Ingredients
- 500g spaghetti
- 1 lb chicken pieces (thighs, wings, or drumsticks)
- 3 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 3 large tomatoes, blended
- 2 tablespoons tomato paste
- 1 scotch bonnet pepper, chopped (optional)
- Salt to taste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 2 seasoning cubes
- Water as needed
- Chopped parsley for garnish (optional)
Procedure
- Season the chicken with salt, thyme, curry powder, and one seasoning cube. Let it marinate for at least 30 minutes.
- In a large pot, heat 2 tablespoons of oil over medium heat. Fry the chicken until golden brown and cooked through. Remove and set aside.
- In the same pot, add the remaining oil. Sauté the onions, garlic, and bell pepper until softened.
- Add the tomato paste, blended tomatoes, and scotch bonnet pepper. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
- Season the sauce with salt, the remaining seasoning cube, and more thyme and curry powder if desired.
- Add water and bring the sauce to a boil. Break the spaghetti in half and add it to the pot.
- Stir and cook the spaghetti in the sauce until it's al dente, adding more water if needed.
- Return the fried chicken to the pot, letting it simmer for a few minutes to absorb the flavors.
- Garnish with parsley and serve hot.
