Pepper Soup
A spicy, comforting Nigerian soup that's packed with flavors, perfect for a cozy meal or remedy for cold days.
Ingredients
- 1 lb goat meat or fish, cut into chunks
- 1 tablespoon pepper soup spice mix
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2 scotch bonnet peppers, sliced
- Salt to taste
- 1 teaspoon ground crayfish
- Seasoning cubes
- 1 bunch scent leaves or basil, chopped
- 4 cups water
Procedure
- In a pot, add the meat, onions, garlic, and seasoning cubes. Pour in water and bring to a boil.
- Once boiling, add the pepper soup spice mix, crayfish, and scotch bonnet peppers. Let simmer for 30 minutes or until meat is tender.
- Adjust seasoning with salt and more seasoning cubes if necessary.
- Add chopped scent leaves or basil and let simmer for 5 more minutes.
- Serve hot with yam, plantain, or rice.
