Noodles with Omelette

Ingredients
For the Noodles:
- 1 packet of instant noodles (any flavor)
- 1 cup water
- 1/4 cup mixed vegetables (e.g., carrots, bell peppers, and peas)
- 1/4 teaspoon soy sauce (optional for extra flavor)
For the Omelette:
- 2 eggs
- Salt and pepper to taste
- 1 tablespoon chopped onions
- 1 tablespoon chopped bell peppers (optional)
- 1 tablespoon vegetable oil
Method
- Prepare the Noodles:
- Boil water in a pot and add the instant noodles along with the flavoring packet.
- Add the mixed vegetables and let it cook according to the instructions on the noodle packet (usually 3-5 minutes).
- For additional flavor, add a splash of soy sauce. Stir well and set aside.
- Prepare the Omelette:
- In a small bowl, crack the eggs and whisk with salt and pepper to taste.
- Add chopped onions and bell peppers (if using) and mix well.
- Heat oil in a non-stick pan over medium heat, pour in the egg mixture, and spread evenly in the pan.
- Cook for 2-3 minutes on one side, then flip and cook for another 1-2 minutes until fully set.
- Once cooked, remove from the pan and cut into strips or squares.
- Serve: Place the cooked noodles on a plate and top with the omelette slices. Serve hot.
