Ewedu Soup
Ingredients
- 1 bunch of fresh Ewedu leaves (jute leaves)
- 1 teaspoon ground crayfish (optional)
- 1 tablespoon locust beans (iru)
- 1/2 teaspoon potash (optional, for smoother texture)
- Salt to taste
- Seasoning cube (Maggi or Knorr)
- Water (as needed)
Preparation
- Rinse the Ewedu leaves thoroughly and pick them from the stems.
- In a small pot, add a little water and bring to a boil. Add a pinch of potash if using.
- Add the Ewedu leaves to the boiling water and cook for a few minutes until they soften.
- Use a traditional broom whisk (Ijabe) or a hand blender to mash or blend the leaves into a smooth consistency.
- Add locust beans, ground crayfish (if desired), seasoning cube, and salt to taste. Stir well and let it simmer for an additional 3-5 minutes.
- Remove from heat and serve hot with your favorite side dish, like Amala or pounded yam.
