Ewedu Soup

Ingredients

Preparation

  1. Rinse the Ewedu leaves thoroughly and pick them from the stems.
  2. In a small pot, add a little water and bring to a boil. Add a pinch of potash if using.
  3. Add the Ewedu leaves to the boiling water and cook for a few minutes until they soften.
  4. Use a traditional broom whisk (Ijabe) or a hand blender to mash or blend the leaves into a smooth consistency.
  5. Add locust beans, ground crayfish (if desired), seasoning cube, and salt to taste. Stir well and let it simmer for an additional 3-5 minutes.
  6. Remove from heat and serve hot with your favorite side dish, like Amala or pounded yam.
